if you didn't guess by the title of my blog - I LOVE QUESO. you could say I am a connoisseur of queso. when i moved to california i was so disappointed to find out that not only do mexican restaurants not serve chile con queso, but people don't even know what it is!
for those of you who don't know the greatest dip in the word, don't fret, i'm here! queso is melted Velveeta with a can of Rotel.
if you look up receipes for chile con queso you will find a lot of variations, but just trust me on this. i've tried all sorts of queso, and if you are going to make it yourself, stick with Velveeta and Rotel (and a splash of half & half). you won't go wrong!
