Chilax

I started writing this entry to brag about the awesome dinner I made last night (Cheddar Chicken) when I realized that I hadn't ever told you about my all time favorite chicken recipe (my fall back dinner) - Parmesan Crusted Chicken.  I'm telling you, if I can make this, you can too!  It's so easy and it is delicious!  Here is my modified (read: easier) version  of the recipe originally found in Food & Wine.

Whitney's Parmesan Crusted Chicken
1 Tbsp Dijon mustard
1 Tbsp extra-virgin olive oil (EVOO)
2 6 oz boneless chicken breasts
½ cup grated Parmesan cheese (if you are watching calories you can scale back to ¼ cup)
½ cup Italian seasoned bread crumbs


Preheat the oven to 475 degrees.

 Between two pieces of wax paper pound chicken breasts till flat. 

In a small bowl, combine Dijon mustard and EVOO.

Brush chicken breasts all over with the mustard mixture.

Mix parmesan cheese and bread crumbs in a gallon Ziploc bag.  (When I'm feeling real fancy I also throw in some salt, pepper, cayenne, and dried parsley.)

Put the chicken breasts (one at a time) in the Ziplock bag and toss around until chicken is covered.

Transfer the chicken breasts to a baking sheet. Dump any extra parmesan cheese and bread crumbs on the top of the chickens before cooking.

Bake the chicken for about 15 minutes.

Run, Whitney, Run

I did this run on Saturday and Sunday!!  I'm so proud of myself.  Both days the 1st mile was the hardest, but the closer I got to the water the more excited I became.   The weather was just so beautiful and I had the best scenery ever (the Golden Gate Bridge and the ocean)!

Happy Item

I'm so ready for this evening!  I'm getting my hair colored.  I might be going back to my blonde blonde hair color.  What I have just isn't really working for me!

Thinking about hair though makes me think of my favorite shampoo/conditioner - Davines Momo.  I haven't bought in forever, but I love it!!!  It makes me want to sing in the shower!

Flower Arranging

Rugs-mania

So I didn't end up getting the zebra print rug from Urban Outfitters - too big - but I did end up with these from CB2 and Crate & Barrel!  That is the last of our wedding gift cards!

Living Room (5x8 - which completely transformed the room - it is so much brighter now!)
Kitchen (to cover my yucky floor!)
The entry way (4x6 - bad picture - looks much better in person)

My apartment is finally getting there!  I'll take pictures this weekend when is everything is ready for the bridal shower that I'm thowing!!!

Zebra Nursery


How cute is this nursery?!  I love the zebra striped rug and the orange chair!  Plus - the puppy dog tails are pretty awesome!
